Usage instructions
- Cut the meat into strips and weigh.
- Calculate spice required at 45g per kg of cut meat (silverside, known as ‘huft’ or ‘stolzen’ in Switzerland).
- Optional: add Worcester sauce or Vinegar @50g-100g/kg meat.
- Mix the meat and spice well, cover and refrigerate overnight.
- Hang to dry.
