A traditional South African biltong spice mix. Use 45g / kg of meat (silverside with sinew removed provides for the classic biltong cut). Also suitable for making game biltong. Add chilli, garlic or other spices for flavoured biltong.

Flavour Blend [Salt, Maize Flour, Maize Meal, Sugar, MSG (Flavour Enhancer), Hydrogenated Vegetable Fat (Palm Fruit), Flavouring (Celery), Anti-caking Agent, Acidity Regulator, Flavour Enhancers Spices (Irradiated), Capsicum Extract (TBHQ)], Salt, Spices & Spice Extracts, Preservative (Potassium Sorbate), Sugar, Colourant.

Usage instructions
  1. Cut the meat into strips and weigh.
  2. Calculate spice required at 45g per kg of cut meat (silverside, known as ‘huft’ or ‘stolzen’ in Switzerland).
  3. Optional: add Worcester sauce or Vinegar @50g-100g/kg meat.
  4. Mix the meat and spice well, cover and refrigerate overnight.
  5. Hang to dry.
