Garam masala is a blend of highly aromatic and flavoursome spices used extensively in Indian cuisine, and usually added to a dish near the end of cooking. Recipes for the spice mix vary greatly according to regional tastes and traditions. Often used with coconut milk, garlic, onion and nuts to form a curry paste base for some Southern Indian dishes.
